While my yellow squash from the garden hasn’t faired too well this Summer so far, there are plenty of friends w/ gardens and an abundance of yellow squash so all is not lost! This is a tasty and healthy recipe for yellow or zucchini squash.
Bloomin' Squash Cassrole
Ingredients
- 3 medium yellow squash
- 1 medium Vidalia onion
- 1/2 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 Tbsp minced garlic
- 1 tsp salt
- 1 tsp pepper
- Olive oil spray
- Additional salt & pepper
Instructions
- Preheat oven to 400 degrees
- Spray small round casserole dish w/ olive oil spray
- Slice squash 1/2" thick, use mandolin (if available), place in bowl
- Spray w/ olive oil spray, add garlic, salt, pepper and any other spices and mix well
- Position squash, edge up, around the entire diameter of the casserole dish, leaving center open
- Trim ends off onion and remove outer skin, cut in half, but don't allow knife to complete the cut all the way through so bottom is in tact
- Continue this 6-7 more times to reduce the "slices" of the onion
- Pickup and place in the center of the casserole
- Spray w/ olive oil spray
- Distribute breadcrumbs and cheese evenly over the squash and onion, add additional salt/pepper
- Place in oven, uncovered, for approximately 40 minutes until browned
